Slow Cooker Creamy Mexican Chicken

Ingredients

    One bag of frozen chicken tenderloins (24 oz or 12 large tenderloins)
    16 oz jar of salsa
    2-15 oz cans of black beans
    15 oz can of diced tomatoes
    12 oz bag of frozen steamfresh super sweet corn
    1 package of Taco Bell taco seasoning mix
    3 oz 1/3 less fat cream cheese

Directions

Spray slow cooker with cooking spray or line with slow cooker liner. Place frozen chicken in the bottom. Cover with remaining ingredients except for taco seasoning mix and cream cheese. Cover and cook for 8 hours on LOW. Remove half of the juices (unless a soupier mix is preferred), and add the taco seasoning mix and stir well. Shred chicken in pot. Add in cream cheese and allow to sit for 15-20 minutes on warm. Mix well and serve on tortillas. Makes 11-1 cup servings.
*Awesome recipe to split into single serve portions to freeze for a future meal. Just thaw and heat until warm!
