Sweet Potatoe Quinoa

Introduction

This is a delicious side dish to serve any time of the year, but it is also a healthy and highly nutritious dish for the Thanksgiving table! This is a delicious side dish to serve any time of the year, but it is also a healthy and highly nutritious dish for the Thanksgiving table!
Number of Servings: 8

Ingredients

    1 C quinoa
    2 C water
    pinch of salt
    1 T olive oil
    2 medium sweet potatoes, peeled and chopped
    1 medium onion, chopped
    1 C mushrooms, chopped
    3 cloves garlic
    salt and pepper to taste
    1/2 t cayenne (optional)

Directions

Combine quinoa, water and a pinch of salt in medium sauce pan. Bring to boil over medium high heat. Cover and reduce to simmer for 20 minutes.

In separate pan, saute sweet potatoes and onion in olive oil for 10 minutes. Add mushrooms, garlic, salt and pepper (and cayenne if using it). Continue to saute, stirring frequently, for approximately 10 minutes until potatoes are cooked thoroughly.

Remove from heat and combine vegetables with quinoa.
