Introduction

I found this breakfast idea in a Weight Watchers magazine and modified it. Next time I think I'll add a few tomato slices. I found this breakfast idea in a Weight Watchers magazine and modified it. Next time I think I'll add a few tomato slices.
Number of Servings: 1

Ingredients

    1 thin slice rye bread
    1 lean bacon rasher
    1 large egg
    4 button mushrooms
    1tsp vegetable spread
    1tbsp semi skimmed milk
    handful of baby spinach leaves
    4 sprays of Fry lite
    Sprinkling of onion powder and black pepper to taste

Directions

Toast rye bread and spread with vegetable spread.
Spray a pan with fry lite and cook bacon. Place cooked bacon on top of toast.
Wilt spinach in pan with a splash of water and arrange over the bacon
Slice mushrooms and cook until just done. Add beaten egg and milk to pan and scramble. Place on top of spinach.
Season with onion powder and pepper to taste.
