Kim'sTortilla soup

Introduction

This makes a huge big pan full of good nutrient rich soup. I make my own stock using a whole chicken with onions carrots celery. But to simplify things I just used the broth and roasted chicen. I completely defat my stock. This recipe is actually the quick version. If you can't find the Everglades cactus dust. Use a seasonig of your choice that has paprika and mesquite in it. Number of Servings: 10

Ingredients

    2 cups of roasted chicken
    8cups defatted chicken brott
    1 cup finely chopped onion
    1 Tbsp. minced garlic (I use roasted)
    2 cups black beans (canned)
    2 cups diced tomatoes
    21/2 cups fire roasted corn (Trader Joes)
    1/2 cup diced green chilis
    1 Tbsp. Better than Bouillan (Chicken)
    1 1/2 Tbsp cumin
    1 Tbsp Everglades cactus dust
    1 Tbsp Natures Seasons (or salt and pepper)

Directions

Add all ingredients into a very large stock pan. Let simmer for at least 1 hour. the longer the better! this is so filling and full of different flavors and textures. It is very filling yet low calorie! This makes about 10 1 cup servings. Its nice garnished with fresh cilantro
