Ingredients

    1 La Tortilla Factory Low Carb/High Fiber Tortilla
    1/4 cup crushed tomatoes
    1 clove garlic, minced
    1 tsp dried basil
    1/4 cup 2% mozzarella cheese shredded
    1/2 small onion, sliced and sauteed
    2 mini peppers, sliced and sauteed
    10 small cherry or grape tomatoes
    2 tbsp shredded parmesan cheese + 2 tbsp shredded 2% mozzarella cheese
    sprinkle of dried oregano
    sprinkle of fresh cracked black pepper

Directions

Preheat oven to 425. Place tortilla on a baking sheet and bake for 3-4 minutes until lightly toasted but not browned.

Combine the crushed tomatoes, basil and garlic. Spread over the tortilla all the way to the edges. Sprinkle with the 1/4 cup of shredded 2% mozzarella cheese. Arrange the onions, peppers and cherry tomatoes. Layer on the combo of parmesan and 2% mozzarella cheese. Sprinkle with the oregano and pepper. Bake for 7 minutes more or until the cheese is melted and lightly browned. Serves 1.
