1 can (15 oz) Organic pumpkin pie mix (Tree of Life)
1/2 cup liquid egg whites
5 fluid ounces (scant 2/3 cup) evaporated 2% milk
1/2 tsp. vanilla extract
Whisk together milk, vanilla, and egg whites. Add to pumpkin pie mix; blend thoroughly with whisk.
Pour into 1 quart oven-safe dish (spray with canola spray for easier clean-up).
Bake at 425 degrees for 15 minutes. Reduce to 350 degrees; bake an additional 40 minutes -- or until set.
Makes about 6 half-cup servings.
