Chicken Breast, no skin, 1 1/2 lbs
Spinach - Dole Baby Spinach, 9 oz bag
Dreamfields rotini, 1 box or any other pasta
Garlic, 3 cloves, diced
Shallots, 1 large, chopped
Mrs. Dash, 2 tsp
Mushrooms, fresh, 1 cup, pieces or slices
1/2 Red Onions, raw, chopped into large pieces
diced tomato, 1 can
Olive Oil - Extra Virgin, 4 tbsp
California Sun Dry: Sun-Dried Tomato Spread, 4 tbsp
(could use regular tomato paste)
Parmesan Cheese, grated, .3 cup
Cook Pasta according to directions, While the pasta is cooking,
Sprinkle Mrs. Dash on both the chicken, (I cook it on my George Foreman Grill), but you could cook it in saute pan with a little cooking spray., before you cook the spinach tomato mix
Put 1/2 of the olive oil in pan, saute onions, add garlic, and mushrooms, cook until tender, add diced tomatoes and sun dried tomato spread. Cook a few minutes, add spinach a bit a time, and cover to cook spinach down, until the spinach has wilted.
Chop cooked chicken into bite sized pieces
In large bowl, mix, pasta, chicken, spinach tomato mix, parmesan cheese, and remaining oil.
