Ingredients

    2 t peanut oil
    1/4 t red pepper flakes
    3 oz. thin-cut boneless, skinless chicken breasts, cut into bite-size pieces or strips
    1/3 cup matchstick carrots
    1/3 cup chopped celery
    1 green onion, sliced
    2 T chopped unsalted roasted peanuts
    1 T hoisin sauce

Directions

Combine oil and pepper flakes in a medium-hot skillet. Add chicken and cook for 2 to 3 minutes, stirring frequently. Serve over brown rice.
