Ingredients

Bulgur, dry, 1 cup
Peppers, sweet, red, fresh, 0.5 medium (approx 2-3/4" long, 2-1/2"
Celery, raw, 1 stalk, medium (7-1/2" - 8" long)
Shallots, 1.5 tbsp chopped
Garlic, 1 clove
Red Ripe Tomatoes, 0.25 cup cherry tomatoes
Salt, 0.5 tsp
Olive Oil, 1 tbsp
Lemon juice, 2 tbsp
Parsley, 1 tbsp
Directions
Cook shallots, celery, bell pepper, and garlic in olive oil until softened. Add remaining ingredients, plus 2 cups water, and bring to a boil, stirring constantly. Cover and put in 350 degree oven for 20-25 minutes.
