Sweet Potato Sauce

Introduction

With the right seasoning base, this sauce can be flavored like any of your favorite high-calorie cream sauces. With the right seasoning base, this sauce can be flavored like any of your favorite high-calorie cream sauces.
Number of Servings: 10

Ingredients

    1 Large Sweet Potato, peeled and diced into small pieces (about 3 cups)
    1 half medium onion, diced
    2 tbs butter
    3 cloves garlic minced
    1/2 cup parmesan cheese
    2 cups fresh spinach
    1 cup chicken broth (or vegetable broth)

Directions

In a medium sized pan, cover sweet potatoes and onion with water and cook over medium-high until soft (you may add salt, but it is not included in the nutritional information). Once potato is soft, puree in a food processor or mash finely. Set aside.
Melt butter in a large skillet, add garlic and brown. Once garlic has browned, add the sweet potato puree. Turn heat to low to avoid splatter. To thin the sauce add vegetable or meat broth to desired consistency. Once bubbling, add the spinach and stir until wilted.

I like to serve this sauce over whole wheat pasta.

Makes 10 servings, about 1/3 cup each.
