Mark Bittman's Hearty Winter Vegetable Burgers

Ingredients

1 lb Raw Beets
1/2 cup Prunes/Dates
1/2 cup Almonds - Raw
1/2 cup Bulgar
3 tsp Dijon Mustard
1 oz Fresh Ginger Root, peeled and chopped
6 oz boiling water
2 tbsp Unbleached All-Purpose Flour
Directions
Pulse beets, dates, almond and ginger in FP until chopped.
Put in a large bowl with bulgur. Pour boiling liquid over, cover, and let stand 20 minutes.
Form into 6 patties. Can be frozen at this point, individually wrapped in plastic wrap. They are loose, so handle them gently!
Heat oil in skillet over medium, and cook each patty for ~5 min on either side.
Great on a bun with some lettuce and dijon, or with a fried egg on top perhaps!
