Upgraded NYT pancakes

Introduction

This is my adaptation of a basic pancake recipe from the New York Times cookbook. This is my adaptation of a basic pancake recipe from the New York Times cookbook.
Number of Servings: 14

Ingredients

    1 cup whole wheat flour
    2 tsp baking powder
    2 tbsp sugar
    0.5 tsp salt
    1 egg
    0.75 cup skim milk
    2 tbsp butter

Directions

Mix flour, baking powder, sugar and salt. Beat the egg, milk and butter until blended. Pour the milk mixture into the flour mixture and stir only enough to moisten the dry ingredients. Do not beat or the pancakes will be tough. Heat a griddle and lightly grease it (or use oil spray). Drop the batter from the tip of a large spoon and bake until the entire surface of the pancake is dotted with holes. Turn and bake the other side until light brown. Makes 14 yummy pancakes.
