Ham & Spinach Quiche



Introduction

Packed with nutrition, this Quiche is wonderful for Breakfast, Lunch or Dinner. Serve with Sliced tomatoes or pears in light sauce.
On a side note, you might want to refer to it as "casserole" when you tell your husband what you're cooking for dinner. Mine wouldn't have anything to do with "Quiche".

Number of Servings: 4

Ingredients

    1 Tbs Extra Virgin Olive Oil
    1 cup chopped ham
    1 cup fresh mushrooms, chopped
    .25 cup chopped onion
    ground pepper, to taste
    1.5 cup fresh spinach
    1.5 cup Egg Beaters
    .25 cup Feta cheese
    .25 cup shredded 2% cheddar cheese

Directions

Preheat oven to 350.
Spray an 8 or 9" pie plate with non-stick cooking spray (the spray is not absolutely necessary, just makes easier clean-up)
Heat olive oil in skillet.
Add onions, mushrooms, ham and fresh ground pepper. Saute till onions are transparent.
Add spinach and cook till spinach is just wilted.
Transfer mixture to pie plate.
Pour Egg Beaters over the top.
Sprinkle with Feta and Cheddar cheese.
Bake at 350 for 25 minutes, or till center is set and top is golden brown.
Let set 5 minutes before serving.

Makes 4-6 servings.
