Mushroom Celery Salad

Ingredients

    Mushrooms, fresh, 1 cup, pieces or slices
    Celery, raw, 1 cup, sliced
    Parsley, 2 tbsp
    Parmesan Cheese, shredded, 1 tbsp
    *Lemon Juice, .5 lemon yields
    salt
    pepper

Directions

put sliced mushrooms in bowl. Drizzle with olive oil ( you can use more than the 1 tsp.- but I am really watching fat intake). Season with salt and pepper. Add Celery, parsley and squeeze fresh lemon juice over. Stir. Add cheese.
