1 Green Acorn Squash (approx. 3 cups cut up)
Brown Sugar .25 cup, unpacked
Granulated Sugar .5 cup
Nutmeg ground .25 tsp
Allspice .25 tsp
Soy Milk .5 cup
Keebler Ready Crust - Shortbread
(I used a ready made pie crust to save time.)
Peel and cube squash. Cover in water and boil until tender. Puree the squash.
Mix squash and everything else, pour into pie pan. Bake for 45-55 minutes at 400 degrees. Chill overnight in refrigerator. Makes 1 9" pie.
