Number of Servings: 6

Ingredients

    Zucchini, 1 large
    93% Lean Ground Turkey, 1 lb
    Bread crumbs, dry, grated, plain,1/2 cup
    Onions, raw, 1/2 small
    Garlic, 1 clove minced
    Mozzarella cheese, part-skim milk, 2 oz grated
    Basil, 3 Tbsp
    Egg beaters 1/4 cup
    Salt, 1/2 tsp
    Pepper, black, 1/2 tsp
    Garlic powder, 1/2 tsp
    Kraft reduced fat Parmesean cheese, 2 Tbsp grated

Directions

Cut the ends off the zucchini and cut into 3 pieces. Put them into lightly salted boiling water and cook for 5 minutes. Cut each piece in half and scoop out seeds and set in a greased baking pan that will hold the pieces flat on the bottom.
Heat 2 tbsp oil in a skillet and saute the onion and garlic for 3 minutes. Place the bread crumbs , cheese, basil, egg, pepper and salt in a bowl. Mix well and combine with onion and ground turkey. Mix well and shape into 6 pieces that will fit inside of zucchini. Sprinkle with about 1 Tbsp of Italan sesoning. Bake for 25 minutes in a 400 degree oven.

Pour sauce over the stuffed zucchini and bake another 10 minutes. Sprinkle with parmesean cheese.
