* Chicken Breast, no skin, 18 ounces
* Butter, unsalted, 4 tbsp
* *Canola Oil, 2 tbsp
* Vegetable Broth - Low Sodium, .25 cup
* Lemon juice, 2 tbsp
* Capers, canned, 2 tbsp, drained
* Parsley, dried, 1 tbsp
Heat skillet, then add 2 T butter & 2 T canola oil and heat until foam subsides.
Saute chicken. Season with salt & pepper 1 minute each side or until cooked through. Transfer to platter.
Add remaining butter, broth, lemon juice and bring to boil. Stir in capers, parsley, salt and pepper.
Spoon over chicken and serve.
