Garbanzos, Cauliflower and Red Potatoes

Submitted by: FOOLISH-JO

Introduction

A faux Indian inspired dish.
Stirring the sour cream in at the end makes a wonderful creamy tomato sauce.

You could cut down on the fat by substituting plain nonfat or lowfat yogurt or low or nonfat sour cream for regular sour cream.

Great with a glass of hearty red wine!

  • Very good! I just about followed the recipe, except for making 1/2 recipe, peeling and chopping my own fresh Italian plum tomatoes, using potatoes from the local farmers market
(which took more than 20 minutes to cook), and garnishing with non-fat Greek yogurt instead of sour cream. - 2/13/12
