Yum Bars

Ingredients

    6 tablespoons flour
    6 tablespoons packed, light or dark brown sugar (or granular style also works)
    1/8 teaspoon baking soda
    1/8 teaspoon baking powder
    1/4 teaspoon salt
    teaspoon vanilla extract
    1 large egg
    2 cups nuts (walnuts, almonds, and/or pecans) toasted and chopped
    1 cup dried apricots, chopped
    1 cups of additional dried fruit (cranberries, pineapple, dates, or other) chopped

Directions

Line a 9 square pan across the bottom and up the sides with parchment paper or aluminum foil.

Preheat the oven to 325 degrees and position the rack in the center of the oven.

Place nuts on a baking sheet and toast for approx 5-10 minutes.

In a large bowl, toss together the flour, baking powder, baking soda, and salt. Add the nuts and all the dried fruit and toss. Use your fingers to mix the fruit, separating any pieces sticking together. Add the brown sugar and toss again.

Beat the egg and vanilla in a small bowl then mix with the fruit and nut mixture until everything's coated with the batter. Be sure to get all the dry mix up from the bottom of the bowl. Spread the mixture in the baking pan and press to even it out.

Bake for 30-35 minutes until the batter is golden brown and has pulled away just-slightly from the sides of the pan. While still slightly warm, cut into desired pieces. Store the bars in an airtight container at room temperature for about a week.
