Salt, 1 tbsp
Sesame Seeds, whole unhulled, 2 cups
Place salt & seeds in dry heavy skillet. Roast slowly over low heat stirring occasionally 2-4 hours, or until seeds are desired color -- darker is stronger flavored. Grind slowly in a suribachi (Japanese mortar & pestle) or do the quick version in a coffee grinder. Store in an air tight container. Sprinkle 1/2 tsp. over food as a condiment.
