Wendle's Homemade Chicken Soup

Ingredients

    1.25 gallons water (20 cups)
    2 boxes low sodium chicken stock
    3 lbs carrots
    4 lbs chicken
    4 stalks celery
    7 ounces chopped celery
    1 tsp salt
    1 tsp Thyme fresh
    1/2 tsp ground thyme

    1 box of whole wheat pasta (for this I used a box of whole wheat elbow noodles). If you want it like campbell's soup, use fettuccine noodles, break them in half before boiling.

Directions

Place uncooked chicken in large stock pot covered with water. Bring to a boil and then simmer for 2 hours covered. Once chicken is fully cooked leave the water in the pot, remove the chicken and de-bone it. Place boneless chicken back in pot and add remaining ingredients. Bring to a boil. Reduce heat to a simmer and let cook for one more hour or until carrots are fully cooked.

Cook your pasta separately according to directions. Rinse pasta and place in finished soup.
