1 medium Cauliflower cut into florets
4 tbsp olive oil
2 garlic cloves, sliced
85g pine nuts
zest of one lemon
juice from half a lemon
1 red chilli deseeded and sliced
-Cook the Cauliflower in boiling water for 3 mins. Drain and rinse with cold water (this will stop it cooking further).
-Heat the oil in a large frying pan. Add the cauliflower and fry for 3 mins until lightly brown.
-Reduce the heat and add the garlic, chilli and pine nuts and cook for a further 2 mins.
-Add the sultanas, lemon juice, zest and the parsley. Season to taste and toss together with the parmesan
