225g ready made puff pastry
5 large tomatoes
0.5 tsp oregano
2tbsp olive oil
-Preheat the oven to 200C/Gas Mark 6
-Roll out the pastry, place on a damp baking sheet and scoure the pastry with a knife about 2.5cm/1" from the edge.
-SLice the brie, tomatoes and courgettes into thin pieces. Fry the courgettes in the oil for about 4 mins with the orgeano
-Arrange the courgettes, brie and tomatoes on the pastry so they are overlapping.
-Drizzle with pan juices from the courgette and bake for 25-30mins.
