This is a simple dish to make in one pot. I substituted brown rice for the white and I liked it still. It gives some nutrition along with the feeling of being full. Ingredients

2Tbls of Olive oil
1 cup of celery, sliced
1cup of onion, chopped
1 green bell pepper, seeded and chopped
3 cloves of garlic, minced
1 pound of boneless, skinless chicken, cut into large pieces
1 package of smoked sausage, chopped into small slices
1 can of diced stewed tomatoes
2 cups of brown rice
water
Directions
In a large skillet, heat the olive oil.
Add the onion, celery,bell pepper, and garlic and saute until tender.
Add the meats and cook until no longer pink.
Add the tomatoes, and rice.
use the tomato can to add 2 cans of water.
season with Tony Chachere's seasoning to taste.
cook on low until the rice has absorbed the liquid.
It may be necesary to add more water with the brown rice.
