In comparison to a big name store brand, same size patty, this sausage has 60 less calories, 50mg less sodium, 8g less fat and 2g more protein.

Number of Servings: 12

Ingredients

    2 lbs finely ground country style pork ribs
    3/4 tbsp ground sage
    3/4 tbsp Kosher salt
    1/2 tsp black pepper
    1/4 tsp ground ginger
    1/2 tsp ground nutmeg
    1/2 tsp thyme
    1/2 tsp cayenne pepper
    3 tbsp apple cider vinegar

Directions

This recipe makes 12 sausage patties weighing 2 1/3 oz each, before cooking.

Add all the seasonings and the vinegar to a mixing bowl, blend and set aside. Grind the pork ribs into a finely ground pile of meat. Add the meat to the seasonings and mix together until evenly mixed.

Break down into 1/2 lb increments, put in freezer bags and freeze. Each 1/2 lb bag makes 3 patties about 3" in diameter & 1/2" thick.
