A very tasty & spicy Italian sausage which can be used in a variety of recipes.When compared to a national brand, same portion size, this sausage has 35 less calories, 6g less fat, sodium same, and 4g more protein. A very tasty & spicy Italian sausage which can be used in a variety of recipes.

Ingredients

2 lbs ground country style pork rib
3/4 tbsp salt
1 tbsp fennel seed
1 1/2 tbsp paprika
1 1/2 tbsp minced garlic
1 tbsp sugar
1 tsp black pepper
1 tsp cayenne pepper
3 tbsp apple cider vinegar
Directions
Mix all the seasonings and the vinegar together in a mixing bowl and set aside. Grind the pork ribs into a finely ground pork. Add to the seasonings and mix well, making sure the seasonings are evenly blended with the meat.
Divide into 1/2 pound increments and put into freezer bags. Each bag makes 3, 2 oz patties for a total of 12 patties. This is good right away, but it is even better 24 hrs later.
I use this blend in my sausage lasagne (1 bag), sausage pizza (1 bag), sausage spaghetti sauce (1 bag) and sausage patties with peppers, onions & mushrooms (1 bag).
