Spicy tofu and potato filling for burritos

Introduction

Even the anti-tofu members of my family liked this. If you cube up the potatoes and tofu small, you really get more potato texture than tofu. Even the anti-tofu members of my family liked this. If you cube up the potatoes and tofu small, you really get more potato texture than tofu.
Number of Servings: 4

Ingredients

    1 good size russet potato, cubed small
    1/4 pkg of extra firm tofu, cubed small
    1/4 pkg soyrizo
    2 tsp water
    1/4 onion, diced
    couple dashes of Tapatio hot sauce
    garlic powder, pepper, salt

Directions

Spray a skillet with Pam and preheat. Add potatoes and season with garlic powder, pepper and salt. Cover and let steam on low-med heat for about 5 min., checking to make sure they don't burn. Add onions and cover again for about another 5 min, until tender but not mushy. Put on a plate and set aside. In the skillet, heat the soyrizo over med heat and mix in the water to thin it out a little. Add in the potatoes, tofu, and dashes of Tapatio, and carefully mix together so not to break up the potatoes and tofu. Let cook over med heat for about 10 minutes, turning every few minutes, to brown and let flavors mix. Makes four burritos.
