Apricot Nectar Chicken

Introduction

Low fat and easy to make in one dish. Low fat and easy to make in one dish.
Number of Servings: 1

Ingredients

    4 boneless, skinless chicken breasts
    20 baby carrots, raw
    3 Idaho potatoes, cut in four pieces each
    1 Large brown onion, sliced
    6 large white mushrooms, cut in four pieces each
    5 Garlic cloves, peeled, cut in half
    1 8 oz. can Apricot nectar
    Black pepper to taste

Directions

Serves 4.
Heat oven to 350.
Line bottom of large glass baking dish with onion slices, mushrooms and garlic.
Sprinkle potato chunks and carrots on top.
Place chicken breasts on top of vegetables.
Pour can of Apricot nectar over the top.
Sprinkle with black pepper, to taste.
Cover with tin foil.
Bake in oven 30 minutes.
Remove foil, continue cooking until chicken lightly browned, approximately 15 minutes.
Serve with spinach salad and crusty bread.
