Introduction

This is the adapted version of Central Market recipe to reduce the fat, cholesterol, calories, and cost.
Portion control -- eight servings (1.5 cups each)
rather than six (2 cups each) -- makes it more compatible with weight reduction as well. Paleo purists can use ghee rather than plain butter

Number of Servings: 8

Ingredients

    3 Tbsp. organic Butter, salted (or ghee)
    2 Tbsp. Organic Olive Oil
    1 large organic Onion, chopped
    1 organic Leek, thinly sliced or chopped (white and 1/3 of green)
    4 cloves Garlic, minced
    1 bunch fresh Parsley, chopped
    1 large (28 oz) cans organic diced Tomatoes
    5 cups organic Chicken Broth [can use half chicken broth and half fish or clam broth]
    1 cup White Wine (we use alcohol-free variety)
    2 pounds fresh wild-caught Pacific Cod fish, cubed
    2 Bay Leaves
    1 Tbsp. dried Basil
    1/2 tsp. dried Thyme
    1/2 tsp. dried Oregano

Directions

Over medium-low heat, melt butter and olive oil in large stockpot. Add onion, leek, garlic and parsley. Cook slowly, stirring occasionally until the onion and leek are soft.
Add tomatoes to pot. Add chicken broth, bay leaves, basil, thyme, oregano, and wine. Mix well. Cover and simmer 30 minutes.
Stir in the cubed fish. Bring to a boil. Lower heat, cover, and simmer 5-7 minutes until done [fish flakes easily].
Makes about 12 cups: 8 servings (1.5 cup each)
