Whole Wheat Linguine & Clam Sauce w/Mushrooms

Introduction

Delicious, healthy version of my italian family's recipe with mushrooms and onions. Delicious, healthy version of my italian family's recipe with mushrooms and onions.
Number of Servings: 3

Ingredients

    3 cans of clams with juice
    med onion
    4 large button mushrooms
    6+ cloves of chopped garlic
    .5 cup fresh parsley
    1 tbs Extra Virgin Olive Oil
    6 oz whole wheat linguine

Directions

chop garlic, set aside, heat EVOO in skillet, add chopped onion and mushrooms, cook til onions are transparent, add garlic and parsley. Boil pot of water add linguine. Add clams with juice to skillet, simmer until pasta is ready. Makes approx 3 cups of sauce, pour over 1 cup of linguine. Top with parmesean cheese.
