Homemade Light Macaroni & Cheese

Ingredients

    8 oz. Smart Taste Penne Rigate
    3/4 can 2% evaporated milk
    1 package 2% shredded sharp cheddar cheese. (7 oz)
    2 oz shreeded mild cheddar cheese
    4 tablespoons light blue bonnet margarine
    1/2 egg yolk
    2 egg whites
    salt and pepper to taste

Directions

Cook pasta to al dente. Then mix all ingredients, except for a small amount of shredded cheese and add to a 2 - 3 quart crock pot. Sprinkle remaining cheese over the top of the mixture. Cook on high for 1 - 1.5 hours or until set.
