Wheat 'n Oat Pancakes

Introduction

Light, fluffy, healthy, and delicious!
**Note** I make my own oat flour by grinding quick cooking oats in a coffe grinder.

Number of Servings: 5

Ingredients

    3/4 cup whole wheat flour
    1/2 cup oat flour
    1 Tbsp Splenda sugar blend for baking
    2 tsp baking powder
    1/4 tsp salt
    1 egg, beaten
    1 cup non fat milk
    2 Tbsp unsweetened applesauce

Directions

Mix dry ingredients in a medium mixing bowl. Stir in egg, milk, and applesauce until just combined. Heat griddle to medium and spray with butter flavor non stick cooking spray. Pour batter by 1/4 cup onto hot griddle. Cook until golden on each side.
Makes 5 servings, 2 pancakes per serving.
These are delicious topped with fruit and/or yogurt.
