Introduction

I got this recipe from Cooking for 2 originally, I've been making it for a couple of years. I use less bacon than the original recipe and low-fat cheddar. Number of Servings: 2

Ingredients

    ● 1 tbsp real bacon bits
    ● 1/4 cup broccoli, florets
    ● 1/4 cup onion, chopped
    ● 1 clove garlic, minced
    ● 3 eggs
    ● 1 tbsp parsley flakes
    ● 1/8 tsp. salt
    ● 1 dash pepper
    ● 1/4 cup low fat cheddar cheese, shredded
    ● 2 tbsp tomato, chopped

Directions

Mix ingredients together in bowl. Grease two ramekins. Cook at 375 degrees for 25 minutes.
