Lo Pro/Lo Sod/Lo Pot Mushroom Alfredo Sauce

Introduction

Number of Servings: 4

Ingredients

    white wine .5 cup
    cream .5 cup
    butter 2tbsp
    crowdie 2tbsp
    mushrooms 4
    green onion 1
    garlic 1 clove
    lemon juice 1 tbsp
    worchestershire sauce 1tsp
    cornstarch 2tbsp
    water .5 cup
    fresh ground pepper to taste
    1 tbsp rosemary

Directions

makes 3 servings

Put all ingredients in blender and blend until smooth. The heat on med in microwave or on stove until sauce thickens (approx 5 min) stir frequently.

NB I have kidney disease (stage 3 /4CKD - non dialysis) so this is a low protein, low sodium, low potassium, hicg fat (have to get my calories somewhere). So, don't be too hard on the ratings - with a bit of salt and real parmesan on top of regular noodles it is pretty darned good - I just can't have it that way :)

Serve over rice noodles with vegan parmesan and pepper to taste

  • It's SO difficult to adjust "good" foods to meet the demands of a renal diet! Impressive - and it sounds good. I'm unsure about the fourth ingredient " crowdie"... looked it up in the dictionary, but still don't know where to procure [or prepare] the gruel. Suggestions? Thanks! - 2/16/11
