Grilled Rosemary Cocoa Pork Tenderloin

Ingredients

    1 boneless pork tenderloin (serves about 4 people when cooked)
    2 tbsp olive oil
    1/4 cup cabernet sauvignon vinegar (or quality red wine vinegar)
    2 cloves garlic finely minced
    1 tbsp sweetened ground cocoa or chocolate
    Pinch of coarse sea salt
    Dash of freshly cracked black pepper
    1 large sprig of rosemary

Directions

Prepare the marinade by whisking together the olive oil, vinegar, garlic, cocoa, sea salt, and pepper. Put the pork tenderloin in a bag or dish with the rosemary then cover with the marinade, making sure it is well covered. Refrigerate for 30 minutes. (Note that I halved the nutritional value of the marinade for this recipe since not all of it gets used.)

Preheat your grill. Grill the tenderloin for 8-10 minutes on each side. Grill with the sprig of rosemary for additional flavor. Let rest for 5 minutes to let the juices settle before slicing and serving. Serves approximately 4 people.
