Gorgonzola-Pear Risotto

Ingredients

    1/2 cup sliced leeks
    pinch of coarse sea salt
    1 small d'anjou pear, chopped
    1/3 cup arborio rice
    1.5 cups no-salt added vegetable broth
    1.5 oz. gorgonzola cheese
    2 tbsp chopped fresh Italian parsley

Directions

Heat a skillet over medium heat, coat with nonstick cooking spray. Add the leeks and toss to coat. Add a pinch of coarse sea salt. Saute until the leeks are tender and just start to brown. Add the arborio rice, tossing to coat. Add the pear and combine well. Add in the vegetable broth about 1/3-1/2 cup at a time: stir a portion of the broth in then once absorbed stir the next portion in. Once the rice is cooked and creamy, remove from heat. Stir in the gorgonzola cheese and parsley. Serves 2.
