Sausage lends wonderful flavor to this hearty main-dish soup, ideal for a chilly night or for any evening when nothing but a bowl of soup will suffice. Since long cooking is not required, you can make and serve this the same evening. Ingredients

    3/4 lb. fully cooked Polish kielbasa sausage, chopped
    1 onion, chopped
    1 tsp. minced garlic
    1 (14 1/2 oz.) can stewed tomatoes, undrained
    1 (16 oz.) can tomato puree
    1 (10 oz.) package frozen chopped spinach, partially thawed
    1 (15 oz.) can cannellini beans (white kidney beans), rinsed and drained
    2 cups water
    2 tbsp. minced fresh dill or 1 tbsp. dried
    1/4 tsp. salt
    1/4 tsp. pepper
    Dash of cayenne

Directions

1. In a large flameproof casserole or stockpot, cook sausage with onion over medium to medium-low heat, stiring often, about 10 minutes, or until lightly browned. Drain off excess fat.

2. Stir in garlic, tomatoes with their liquid, tomato puree, spinach, beans, water, dill, salt, pepper, and cayenne. Heat to boiling, stirrring occasionally. Reduce heat to low and simmer, uncovered, 15 minutes.
