Daddy's Spinach w/Egg

Introduction

I always thought my dad made the best spinach.....he would take an egg and beat it and through it on top of the spinach and le it cook until the juice was always gone...... mmmmmmmm I always thought my dad made the best spinach.....he would take an egg and beat it and through it on top of the spinach and le it cook until the juice was always gone...... mmmmmmmm
Number of Servings: 1

Ingredients

    2 1/2 cups of frozen or canned spinach (if using canned be sure to drain and replace with 1 cup of water or chicken broth) and it doesn't have to be chopped--can be whole leafed

    1 to 2 cups of water or chicken broth (chicken broth gives it such flavor)

    1 large egg, beaten

    Seasonings (optional)

Directions

In medium sauce pan add spinach and liquid...........cook for 15 minutes

In small bowl beat egg and then add to spinach, cover and let cook on medium to low heat for the remaining time.

1 serving = 2 cups
