Chicken Vegetable Casserole W/Topping

Introduction

I need quick, complete meals to take to work. This casserole works well for that. It reheats in the microwave fairly well. I added Malt-o-Meal to the stuffing mix because it makes it more filing & adds iron. I need quick, complete meals to take to work. This casserole works well for that. Ingredients

    Topping
    1 6 oz. package stuffing mix, any flavor
    6 Tbsp dry Malt-o-Meal Cereal
    3 Cups Vegetable Stock
    1 Tbsp Margarine

    Filling
    2 lbs cooked, cubed boneless, skinless Chicken Breast
    1 can lowfat Cream of Mushroom Soup
    4 Tbsp Nonfat Sour Cream
    3 c Chopped Broccoli
    2 c Cubed Zucchini
    2 c Chopped Scalloped Summer Squash
    2 c Cooked Chopped Cauliflower
    3 c Chopped Asparagus
    2 c Red, Orange, & Yellow Sweet Peppers
    1 c Mushrooms, chopped into large pieces

Directions

Mix dry Malt-o-meal cereal with dry stuffing mix. Prepare stuffing mix using package instructions, but decrease margarine to 1 tbsp. Also replace liquid with vegetable stock. If you like softer vegetables, steam broccoli, zucchini, & summer squash until tender. Sprinkle 1/2 of prepared stuffing mixture over bottom of large, deep baking dish. Layer chicken and vegetables. Mix cream of mushroom soup & nonfat sour cream together & spoon over chicken & veggies. Top with remaining stuffing mixture. Bake at 350 degrees for 30 minutes or until filling is cooked through. Makes 8 servings of about 2 & 1/2 to 3 cups.
