Mexican Chicken

Introduction

Number of Servings: 1

Ingredients

    4 ounces chicken breast (no skin/no bone)

    1/3 cup sweet corn (frozen)
    1/4 cup black beans (canned)
    1 tsp vegetable oil
    Cumin (to taste - approx 1/4 tsp)
    Chili power (to taste - approx 1/4 tsp)
    1 tablespoon reduced fat sour cream
    2 tablespoons 2% Mexican blend shredded cheese

Directions

In a small pan, coat pan with cooking spray.

Put 1/3 cup sweet corn in pan and cook until browned

Heat 1 tsp vegetable oil in a separate pan

Add cumin and chili powder to taste (i use approx 1/4 tsp)

Place chicken in pan and cook until no longer pink (i like to put on med-high heat at first to brown the outsides, then lower to low to medium heat to finish cooking)

Add corn to chicken, and also put in 1/4 cup of black beans (canned)

Leave in pan for another 2-5 minutes and serve

Optional: Serve with 1 tablespoon reduced fat sour cream and 2 tablespoons of 2% shredded cheese
