Pork Stroganoff

Ingredients

    1lb boneless porl, lean
    1 T. olive oil
    1 med onion, chopped
    2 garlic cloves
    2 T flour
    2 T. tomato paste
    2 cups veg or chicken stock (homemade, no salt)
    1/2 cup sliced mushrooms
    1 lg green pepper
    pepper
    1/2 tsp grated nutmeg
    1/4 cup low fat sour cream

Directions

Serves 4
Slice pork 1/2' slices. fry pork, onions, garlic 4-5 min till lightly brown.
stir in flour and tom. paste, then pour in stock and stir.
Add mushrooms, pepper, green pepper and nutmeg.
Bring to boil, cover, simmer 20 min or till pork done.
Remove from hewt and stir in sour cream.
Serve with rice or potatoes
