Sunshine Snack Bars

Introduction

These make a nice healthy snack or breakfast on the go These make a nice healthy snack or breakfast on the go
Number of Servings: 12

Ingredients

    2 cups raw grated carrots
    1/4 cup diced dried apricots
    1/2 cup raisins or golden raisins
    2 cups quick cooking oats
    1/2 cup chopped walnuts
    1/2 tsp. cinnamon
    12 oz. frozen apple juice concentrate (thawed)

Directions

Preheat oven to 350 degrees.
Combine first 6 ingredients in bowl.
Add apple juice concentrate and stir well.
Press ingredients into a greased 9×11 glass baking dish.
Bake for approximately 40 minutes, until bars are brown.
Cool completely before slicing.
Makes 12 bars.
