Low Carb Peanut Butter Cookies

Introduction

These cookies would probably be even more low carb if I had had an artificial brown sugar, but since I didn't we'll go with what we have.

I ground my own almond flour from raw almonds. I used my food processor and simply ground it up. I understand that a coffee grinder (preferably and unused one) works better.

Number of Servings: 24

Ingredients

    Wet Ingredients
    1/2 C Peanut Butter
    1/2 C Granulated Splenda
    1/2 C Packed Brown Sugar
    1/4 C Light Butter, softened
    1/4 C Shortening
    1 Egg

    Dry Ingredients
    1.5 C Almond Flour
    3/4 t baking soda
    1/4 t salt

Directions

Preheat oven to 375
Combine all wet ingredients until light and fluffy
Add dry ingredients and beat until a soft dough forms

Spoon onto ungreased cookie sheet and bake for 8-10 minutes

Note: dough will not seem as firm as expected, but cookies are delicious!

Let cookies set up on pan for 5 minutes to set.
