Potato Soup

Introduction

My favorite homemade potato soup. My mom always made it very simple, potatoes, onion, water and milk...I glorified it a bit. My dad always like it thin, so this is a thin soup. You can thicken it a bit by mashing some of the potatoes. My favorite homemade potato soup. My mom always made it very simple, potatoes, onion, water and milk...I glorified it a bit. My dad always like it thin, so this is a thin soup. You can thicken it a bit by mashing some of the potatoes.
Number of Servings: 10

Ingredients

    8 Russet Potatoes, chopped
    1 large onion, diced
    1 cup carrots, chopped
    2 celery stalks, chopped
    7 chicken bullion cubes
    Black Pepper to taste
    1 1/3 cup milk

Directions

Add potatoes, onions, carrots, celery, pepper and bullion to a large pot, cover with water and bring to a boil. Reduce heat and simmer about 25 min, or until potatoes are soft. Add milk and heat for another 5 min, or until heated through.

Add you favorite toppers (not included in nutrition info), we have done crackers, cheese, celery salt, sour cream, bacon, or anything else you would add to a baked potato.
