Number of Servings: 4

Ingredients

    1 teaspoon olive oil
    8 chicken thighs, boneless, skinless
    1 medium onion, chopped
    2 stalks of celery, chopped
    1 cup chopped carrots
    3 garlic cloves, minced
    1 can diced tomatoes (14.5 oz, do not drain)
    1 cup chicken broth
    1/2 cup white wine (or an additional 1/2 cup of broth)
    1 bay leaf
    1 tbsp parsley flakes
    1 tbsp lemon juice or 1 tsp lemon zest

Directions

This makes 4 servings, 2 thighs each.

Over medium heat oil in a dutch oven or other oven-safe pan.
Saute chicken for 5 minutes or until browned on both sides and remove to a bowl.
Put the onion celery, carrots, and garlic in the pan and saute until softened.
Add the tomatoes, chicken broth, wine, lemon juice, parsley and whole bay leaf, return the chicken to the pan.
Cover and place in the oven at 325 degrees (no need to preheat) for 1 hour; chicken will be fork tender.
Discard the bay leaf and serve over brown rice.
