Black Bean Corn Salsa

Introduction

This is the lighter version of this recipe from a dear friend. One of the favorites at church potlucks! It's so fresh and is great with chips or to garnish a grilled chicken breast. Number of Servings: 16

Ingredients

    1 can black beans rinsed/drained
    1 can blackeye peas rinsed/drained
    1 can yellow corn drained
    1 can diced tomatoes drained
    1/2 bottle Fat Free Italian Dressing
    1 medium onion chopped (red is great if you have it)
    2 bell peppers chopped (whatever color you prefer)
    Fresh cilantro is a wonderful added touch if you have it as well!


Directions

Mix all ingredients together and place in refrigerator. Marinate overnight and serve chilled.

Makes 8 - 1/2 cup servings.
