Roasted chicken noodle soup with caramelized onions

Introduction

Original recipe taken from Swanson. You could easily use only one cup of Roasted Chicken and cut the fat/calories for this recipe in half without sacrificing taste. Number of Servings: 11

Ingredients

    2 cups thigh meat chicken (only because of what was on hand)
    8 cups Swanson 100% fat free low sodium chicken broth
    3/4 cup Farfalle or campanelle pasta
    2 medium onions,cut in half then thinly sliced
    2 Cups baby carrots, sliced
    4 medium stalks celery, sliced
    2 Tsp canola or vegetable oil

Directions

Heat oil in medium skillet over medium-high heat. Add onions and cook approx. 3-5 minutes or until starting to brown at the edges. Lower heat to medium, and cook until caramelized (golden brown throughout, and tender). In a separate stock pot, add chicken stock, celery, and carrots, and bring to a boil. Add cooked chicken and pasta, and bring to a second boil. Lower heat and simmer approx. 10-15 minutes until pasta is done and carrots are tender. Add caramelized onions and serve immediately. Makes approx. 11-1 cup servings.
