Introduction

Number of Servings: 5

Ingredients

    5 egg whites
    1 large egg
    1/2 cup chopped fresh spinach
    2 teaspoons of grated parmesan cheese
    1 tbsp 1% Milk
    Salt and pepper to taste
    5 1-2 second sprays of Pam

Directions

- In a medium sized bowl, beat egg whites and egg
- Continue beating, add milk, parmesan cheese, salt and pepper
- Continue beating, add chopped spinach
- Heat a small, round egg pan, once hot, reduce to medium heat
- Spray once with Pam
- Spoon in 1/5 of the mixture
- cook on one side til lightly brown then flip and cook on other side until the same
- Repeat for rest of the mixture
- Wrap and refrigerate for use; also freezes okay
- Makes 5 servings

- Top with cheese, lettuce, tomato, serve on a whole grain english muffin or half a bagel. Enjoy!
