whole Wheat Blueberry Muffins

Number of Servings: 12

Ingredients

    ! cup fresh or frozen blueberries
    1 cup soy milk
    1/4 cup applesauce
    1 teaspoon vanilla extract
    2 Tablespoons plain nonfat yogurt
    1 egg
    2 T oil
    2 cups whole wheat flour
    1/3 cup sugar
    1 Tablespoon baking powder
    1/2 teaspoon salt

Directions

Preheat the oven to 400 degrees. Spray the muffin tin with cooking spray or line with parchment paper. Beat the wet ingredients together. Stir together the dry ingredients. Stir into the wet ingredients. Batter will be lumpy. Carefully fold in the blueberries. Spoon into the muffin tins, dividing evenly between 12 cups. Bake for 20 minutes until golden. Remove muffins from tin and pace on a cooling rack. Serve warm or cool. Makes 12 muffins.
