Squash with beans

Introduction

Number of Servings: 3

Ingredients

    1 poiund winter squash, such as butternut, acorn, or buttercup (about 1 large acorn squash)
    1 C chopped onion
    1 can of beans, such as white, navy, or butter
    0.5 tsp cumin powder
    0.25 tsp turmeric powder
    1 stalk of celery, chopped
    1 small carrot, chopped
    2 Tblsp. parsley, chopped
    1.2 tsp salt, or less to taste
    1 C water

Directions

Peel and take the seeds out of the squash and cut into small pieces (alternatively, bake the squash for 30-40 minutes to soften it, then scoop out the flesh). Put squash, onion, celery, carrot, and parsley into a pot with the water. Simmer until the vegetables are soft. Add the spices and beans and summer for another 5 minutes. Mash with a potato masher or ricer and serve as a main dish or side dish. With more water, this also makes a nice soup.
